Champagne Piot Sévillano is rooted in the rich terroir of the Vallée de la Marne, renowned for its clay-limestone soil that imparts minerality and texture to the wines. Nestled between Épernay and Château-Thierry, this region is the cradle of Pinot Meunier, which thrives here thanks to the favorable climate and diverse exposures. The estate is a testament to ten generations of family winemaking, with a modern revival initiated by Christine and her team in 2007, focusing on sustainable practices that earned them High Environmental Value (HVE) certification in 2015 and organic farming certification in 2023. The house is distinguished by its meticulous approach to vinification, treating each grape variety individually to highlight its unique characteristics. Unlike many houses that use Pinot Meunier as a supporting player, Piot Sévillano elevates it to the forefront, showcasing its aromatic richness and silky texture. Embracing innovative techniques, the estate utilizes an array of aging vessels, including stoneware jars, concrete eggs, enamel tanks, and oak casks, resulting in a collection of 16 exceptional champagnes, alongside 3 Coteaux Champenois and 1 Ratafia, all crafted with artisanal precision. Each cuvée reflects a harmonious blend of tradition and innovation, embodying the essence of excellence.
