Champagne house
Hervé Dubois
Hervé Dubois Champagne is a family-owned house with deep roots in the Côte des Blancs, tracing its origins back to 1920. Initially founded by Paul Dubois, the estate began as a humble endeavor transporting wine, eventually evolving into a dedicated champagne producer. Under the stewardship of Paul’s son Jean and later his grandson Hervé, the house has embraced modern winemaking practices while remaining committed to its heritage. Hervé now cultivates 6.5 hectares of vines, predominantly Chardonnay, alongside Pinot Meunier and Pinot Noir, with a focus on minerality and freshness. Located in Avize, a Grand Cru village, the estate benefits from chalky soils that yield wines of exceptional elegance and finesse. Hervé Dubois practices integrated viticulture, emphasizing sustainability and a deep connection to the terroir. Notably, certain Chardonnay vats undergo a unique vinification process that avoids Malolactic Fermentation, preserving the wine's vibrant freshness. With an emphasis on quality and tradition, Hervé Dubois Champagne continues to flourish, upheld by the passion of generations dedicated to crafting refined and expressive champagnes.
