What is an alcohol-free bubble?
An alcohol-free bubble starts out as an ordinary sparkling wine: the grapes are harvested, pressed and fermented as usual. Only afterwards does the extra step follow that sets this product apart from a regular sparkling wine.
During de-alcoholisation the wine is gently heated at a low temperature, so the alcohol evaporates without losing the flavour compounds. The carbonation is then reintroduced, so the bubbles are preserved.
Because the alcohol is removed, the end result can no longer be sold as champagne: that designation of origin only applies to wine with alcohol. Even so, the winemaking itself stays the same as for a classic sparkling wine from the same region.
